Seabuckthorn Schnapps

This is a classic Danish recipe for a vodka schnapps flavoured with ripe seabuckthorn berries.
Ingredients:

500g seabuckthorn berries (they must all be fully ripe)
1 bottle clear, unflavoured vodka (at least 40% alcohol by volume)

Method:

Wash the berries thoroughly, dry then place out on newspaper in a cool place to dry completely. Transfer to the freezer and allow to freeze for at least 7 days (this makes the fruit taste sweeter).

Transfer the frozen fruit to a clean glass jar with a tight-fitting lid. Fill the jar with the vodka then seal tightly and place in a dark cupboard at room temperature to steep for at least 10 weeks. Invert and shake lightly every day.

When the seeping is done strain and filter the infusion into a clean glass bottle and seal (freeze the fruit pulp to make cakes). Store in a dark cupboard to age for at least 6 months then filter into a clean bottle. Serve at room temperature in a shot glass and keep the bottle in a dark cupboard between servings.
